How many barbecues have you been to in the past few years where the menus actually excited you? Take the time to surprise your guests with your backyard cuisine this summer by introducing them to a new way to cool off.

Chef Michael P. Clive has created an adult version of the ice cream float with Rickard's Dark, a well-balanced porter with a hint of maple syrup. Surprisingly, robust beers like porters or stouts pair well with vanilla ice cream. The vanilla flavour and sweetness balance out the bitterness of the hops to create a rich flavour that's a little unexpected.

This is a treat that's memorable, takes seconds and doesn't force you to slave over a hot grill.

3 oz. Rickard's Dark

1 scoop of vanilla ice cream

Drizzle of maple syrup

-Add three ounces of Rickard's Dark to bottom of a stemmed glass

-Add a scoop or two of vanilla ice cream

-Drizzle with maple syrup
